This one looks pretty good.

Did you use the set highlight and shadows or the thresholding?

I used thresholding for this one...although it is not clear to me when to use thresholding vs set highlight and shadows when I look at any given image. Experience? Trial and error? Can you give some guidance?

The way I do it is pretty simple,

If there is a clear highlight I use the Pinning.  Same for shadow...

But if it is like the sunflower and there is no clear highlight I use thresholding because I do not know where the highlight is going to pop up. 

Remember the highlight may not be white....and the darkest shadow may not be black.  The thresholding shows the highest pixel value and the darkest pixel value...

When there is not a white or black, I use thresholding to define the "brightest" and "darkest" pixels in the frame....I usually go with it until I find them, and then back off until the are almost all gone so that I do not blow out a color.
