I used Threshold in Lab to set the shadow and highlight, then set a neutral point on the bottom of the frame, I then moved the colour slider to try and get the fruit to what I thought was right, the carrots, red apples and watermelon & green tomatoes

Good compromises on the neutrals.  There are color shifts but they are manageable.

You could push the saturation even more....Greg
