The 3-D improvement in this Week 2 exercise is really impressive; but I tried and failed to get a touch of green into the stalks: they look too grey to my eye.

indeed they are...you have gone too far.  Use the "Color Worm" to help you find the greens on the Saturation and Hue channels and see if you can bring them back...If you over adjust the saturation you will get the flat color spots..Try to keep the colors rich and full and still add shape.

Things to watch out for..."Blue Stems"  and Red over saturation in the mid tones....They will crop up quickly.....

You may want to start over with a clean copy of the image...
