When you open up the shadows; you need to set some control points up in the highlights to keep your adjustment from blowing them out.  the necks of the horses are valuable to you for 2 reasons...they have a great shape in them and the curved surface give you a neutral point. 

Please remember that as well as a neutral mid-tone an image should have a neutral white and a neutral black...not always... but if they are there in this type of a scene they can be used as a neutral.  I also use other landmarks for my corrections...for instance in the screen shot attached I set a hue clock on the skin tone and made sure it was not to the left of the Red marker.

This helps me to know that my neutral is helping me...if I move it around the face gets too red to be reasonable.
